Jasminum grandiflorum blooms at night. The plant releases aromatic compounds more intensely after dark, and their concentration peaks just before sunrise. That’s why harvesting takes place at dawn, by hand, and finishes before eight in the morning.

Obtaining a small amount of absolute requires tons of flowers, making it one of the most prized ingredients in natural perfumery. The delicacy of the petals makes steam distillation impossible, so solvent extraction is used.
